This recipe is based on Jamie Oliver's Blueberry Blender Pancake recipe and is one of the healthiest pancake recipes!
You will need:
For the mix:
- 1 1/2 cups blueberries
- 1 large ripe banana
- 3/4 cup 2% milk
- 1 large egg
- 1 3/4 cup whole wheat flour
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- Extra virgin olive oil (a little bit to coat the pan)
For the garnish:
- 1/4 cup Greek yogurt
- Cinnamon (ground)
- 28gr. raw, unsalted pecans, walnuts, hazelnuts or almonds
- Honey
Steps:
- Put half the blueberries, the peeled banana, milk, egg and flour in a blender to make the pancake batter.
- Transfer the batter into a bowl.
- Place a large non-stick frying pan over medium high heat.
- Pour in a little bit of olive oil (about 2-3 tablespoons), then use a paper towel to wipe it around and absorb the excess olive oil.
- Put the batter into the pan forming small or large pancakes (it's up to you).
- Cook for a couple of minutes on each side until it turns golden.
