Blueberry Pancakes

This recipe is based on Jamie Oliver's Blueberry Blender Pancake recipe and is one of the healthiest pancake recipes!

You will need:

For the mix:


  • 1 1/2 cups blueberries
  • 1 large ripe banana
  • 3/4 cup 2% milk
  • 1 large egg 
  • 1 3/4 cup whole wheat flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • Extra virgin olive oil (a little bit to coat the pan)

For the garnish:

  • 1/4 cup Greek yogurt
  • Cinnamon (ground)
  • 28gr. raw, unsalted pecans, walnuts, hazelnuts or almonds
  • Honey

Steps:

  1. Put half the blueberries, the peeled banana, milk, egg and flour in a blender to make the pancake batter.
  2. Transfer the batter into a bowl.
  3. Place a large non-stick frying pan over medium high heat.
  4. Pour in a little bit of olive oil (about 2-3 tablespoons), then use a paper towel to wipe it around and absorb the excess olive oil.
  5. Put the batter into the pan forming small or large pancakes (it's up to you).
  6. Cook for a couple of minutes on each side until it turns golden.
