You will need:

For the mix:


  • 125gr. cocoa powder
  • 1 bag of chocolate pudding
  • 6 tablespoons sugar

For one serving:

  • 1 cup of milk (low fat, full fat, almond milk etc.)
  • 2 tablespoons of the mix
  • cinnamon (optionally)

Steps:

  1. Pour one cup of milk in a saucepan.
  2. Add two tablespoons of the mixture.
  3. Stir constantly, until it boils and becomes as thick as you prefer.
  4. You may add now the cinnamon or some drops or vanilla extract.
  5. Pour your hot chocolate in a mug and enjoy!!!

You will need:


  • 1kg. milk
  • 100gr. honey
  • 1 vanilla stick
  • 2 cinnamon sticks
  • 1/4 teaspoon cayenne pepper
  • 400gr. couverture chocolate (60%-66% cocoa, melted)

Steps:

  1. Put the milk, the honey, the vanilla, the cinnamon and the pepper in a pot.
  2. When it starts to boil, take the pot off the stove and add the melted chocolate.
  3. Leave the mixture for 10', then give it a good stir.
  4. Throw away the vanilla and the cinnamon and heat the mixture again (not too much).
  5. Then serve the mixture in 6-7 cups.

Tips:

  • Melt the chocolate couverture using Bain-marie.

You will need:


  • 400gr. hazelnuts
  • 360gr. caster sugar
  • 50gr. cocoa powder
  • 130gr. hazelnut (or seed) oil
  • 200gr. milk couverture chocolate

Steps:


  1. Put the hazelnuts in a blender.
  2. Put half the oil and blend until the hazelnuts are dissolved.
  3. Stop blending when the mixture has a thin texture (4'-5' approximately).
  4. Cut the chocolate in little chunks and put it in the blender. The chocolate will melt because of the high temperature from the mixture.
  5. Mix for 10'' and add the caster sugar and the cocoa powder.
  6. Mix for one minute and the spread is ready.

Tips:

  • You can keep it for 1-2 months out of the fridge or longer when stored in the fridge.
  • If your blender is small, use half the amount of the ingredients and then repeat the process with the other half.
