Beet salad

You will need:

  • 200gr. Greek yogurt (full fat or low fat)
  • 3-4 beets (boiled and chopped in little cubes)
  • 1-2 garlic cloves
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons balsamic vinegar
  • a pinch of salt
  • 3-4 tablespoons walnuts (chopped in small pieces)

Steps:

  1. Put the Greek yogurt in a large bowl.
  2. Press the garlic with the flat surface of a chef's knife (don't peel it) and blend it with the Greek yogurt.
  3. Add the salt, the olive oil and the vinegar and mix it well.
  4. Add the beets and the walnuts and mix gently.
  5. Add a little bit of salt if needed.
  6. Leave it in the refrigerator for about one hour.
  7. Remove the garlic from the salad.
  8. You can decorate it by adding some more walnuts or boiled vegetables on top.
