Beet salad
You will need:
- 200gr. Greek yogurt (full fat or low fat)
- 3-4 beets (boiled and chopped in little cubes)
- 1-2 garlic cloves
- 3 tablespoons extra virgin olive oil
- 2 tablespoons balsamic vinegar
- a pinch of salt
- 3-4 tablespoons walnuts (chopped in small pieces)
Steps:
- Put the Greek yogurt in a large bowl.
- Press the garlic with the flat surface of a chef's knife (don't peel it) and blend it with the Greek yogurt.
- Add the salt, the olive oil and the vinegar and mix it well.
- Add the beets and the walnuts and mix gently.
- Add a little bit of salt if needed.
- Leave it in the refrigerator for about one hour.
- Remove the garlic from the salad.
- You can decorate it by adding some more walnuts or boiled vegetables on top.
