Omelette with vegetables
You will need:
- 50gr. sour milk
- 200gr. feta cheese
- 12 eggs
- 80gr. extra virgin olive oil
- 500gr. tomato (peeled and chopped in cubes)
- 2 zucchinis
- 1 eggplant (chopped in cubes)
- 1 finocchio
- salt
- pepper
- 1 teaspoon sugar
- 2 tablespoons oregano
- some parsley
Steps:
- Heat the extra virgin olive oil in a large frying pan. Then, add the eggplant, the zucchini, the finocchio and fry them until they turn brownish.
- Add the tomatoes, a pinch of salt, pepper, sugar, parsley and oregano.
- Lower the heat and leave it for about 10'-15', until they are almost dry.
- Put the eggs In a large bowl and whip them gently.
- Add the sour milk, stir and add the mixture in the frying pan.
- Add a pinch of salt and pepper if needed and mix until the egg is warm and all the ingredients are combined.
- Mush the feta cheese and add it in the pan for 3'-4' before you serve the omellete. Enjoy while it is hot.
