Omelette with vegetables

You will need:

  • 50gr. sour milk
  • 200gr. feta cheese
  • 12 eggs
  • 80gr. extra virgin olive oil
  • 500gr. tomato (peeled and chopped in cubes)
  • 2 zucchinis
  • 1 eggplant (chopped in cubes)
  • 1 finocchio
  • salt
  • pepper
  • 1 teaspoon sugar
  • 2 tablespoons oregano
  • some parsley

Steps:

  1. Heat the extra virgin olive oil in a large frying pan. Then, add the eggplant, the zucchini, the finocchio and fry them until they turn brownish.
  2. Add the tomatoes, a pinch of salt, pepper, sugar, parsley and oregano.
  3. Lower the heat and leave it for about 10'-15', until they are almost dry.
  4. Put the eggs In a large bowl and whip them gently.
  5. Add the sour milk, stir and add the mixture in the frying pan.
  6. Add a pinch of salt and pepper if needed and mix until the egg is warm and all the ingredients are combined.
  7. Mush the feta cheese and add it in the pan for 3'-4' before you serve the omellete. Enjoy while it is hot.
