You will need:
For the pumpkin mix:
- 350gr. cream cheese
- 90gr. sugar
- 1/2 teaspoon vanilla extract
- 2 eggs
- 1 1/2 teaspoon cinnamon (ground)
- 1/2 teaspoon ginger (ground)
- 180gr. pumpkin purée
For the brownie mix:
- 180gr. flour
- 80gr. cocoa powder
- 1/4 teaspoon baking soda
- 180gr. butter
- 330gr. sugar
- 3 eggs
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon salt
- 100gr. walnuts
Steps:
For the pumpkin mix:
- Preheat the oven at 180°C
- Put greaseproof paper at the base and the sides of a 23*33cm baking pan
- Cover the greaseproof paper with a little bit of melted butter and a little bit of flour. It will help in taking the brownies off the pan without breaking it in pieces.
- In the mixer, blend the cream cheese and the sugar until the sugar melts.
- Then add the vanilla extract and the eggs one by one. Each egg must be added to the mix only when the previous egg is absorbed and well mixed.
- Add the spices and the pumpkin purée, mix a little bit and leave it to rest.
For the brownie mix:
- In a bowl, blend the flour, the cocoa powder and the baking soda after sifting them.
- Then, put the walnuts, mix and leave the mixture aside to rest.
- Next, melt the butter and mix it with the sugar. Add the eggs one by one while stirring it.
- Add the vanilla extract and the salt.
- Add the flour mixture from step 1 and mix with a spatula.
- Put half of the cocoa mix at the base of the baking pan.
- Then add the pumpkin mix on top of it.
- Cover it with the rest of the cocoa mix.
- Bake for 35'-40'.
Tip:
You can frost it with cocoa glase, wipping cream or caster sugar.
