Melomakarona
You will need:
For the syrup:
- 500ml water
- 800gr. sugar
- 150gr. honey
- 3 cinnamon sticks
- 3 clove sticks
- 1 orange cut in half
For 1st mixture:
- 400ml orange juice
- 400ml vegetable oil
- 180ml extra virgin olive oil
- 50gr. powdered sugar
- 1/2 tablespoon clove (ground)
- 2-3 tablespoons cinnamon (ground)
- 1/4 teaspoon nutmeg (ground)
- 1 teaspoon baking soda
- zest from 2 oranges
For 2nd mixture:
- 1kg. flour for all purposes
- 200gr semolina
Steps:
For the syrup:
- Preheat the oven at 190C
- Put all the ingredients in a large bowl and mix them
- In a second bowl, mix the ingredients for the 2nd mixture
- Add the 1st mixture to the 2nd mixture and mix very gendly with your hands, for about 10''. Don't mix them too much, because they will not turn crispy!
- With your hands, form the cookies from the dough in an oval shape (3-4cm. diameter, 30gr. each) and bake them in the oven for 20-25' until they are crispy and brownish.
- When they are ready and hot from the oven, put them in the cold syrup and leave them for 10-15''.
- Finally, once you take them out of the syrup and they are dry, top them with a little bit of honey and walnuts.
