Sesame bar

You will need:

  • 500gr. sesame seeds (or any other nut of your choice)
  • 500gr. honey
  • lemon zest
  • greaseproof paper

Steps:

  1. At a non-stick pan, leave the sesame seeds to roast.
  2. Put the honey in a pan and leave it for 10' to boil.
  3. Then, lower the heat, blend the other ingredients with the honey and mix.
  4. You can check when the mix is ready by forming a small sphere with it and putting it in a glass of water. If the sphere stays intact, the mix is ready. If it dissolves, it is not ready yet. (be careful not to burn your fingers when it's still hot)
  5. When it is ready, place a large amount of greaseproof paper over a flat surface.
  6. Place the mix on the greaseproof paper and if you want, you can add a little bit more sesame seeds.
  7. Cover it with greaseproof paper and flaten it with a rolling pin. The bar's width should be about 1cm long.
  8. Leave it to rest for 15'. Then cut it in pieces and leave it to cool down.
This recipe comes from ancient Greece. You will find references of it in Homer's Iliad and it is considered to be one of the world's healthiest food.
It is a superfood, providing plenty of energy and nutrients without having many calories.
It can be preserved at a dry place, avoiding direct sun contact for many months at room temperature.
